This time I'm featuring a quick & easy risotto - no stirring required - that makes a great weeknight dinner. The key is cooking a flavorful plain risotto on its own and mixing it into a skillet that contains a desired combination of vegetables, herbs, seafood, sausage...whatever strikes your fancy. I'm demonstrating the recipe with one of my favorite combinations - tomatoes and mushrooms - both of which have had their flavors concentrated before being mixed into the rice. Just had a look at the instructions - I *love* that this is a no-stir risotto recipe! Why is it that I've never heard of this method before?! Looks sensational, nice work :)

Hi Ellie - there are purists who would say that constant stirring is absolutely required to release as much starch as possible from the Arborio rice. But I've found that simply stirring at the end and incorporating a bit of extra broth if required for the desired texture gets you pretty darn close to the traditional method. And much easier for me to tackle at the end of the day!
